The role is accountable for output, consistency, food safety, cost per kg and team performance.
Key Responsibilities
Production Planning & Output:
* Build daily, weekly and monthly production plans against sales forecasts, outlet demand and B2B orders
* Run blending, sifting, mixing and packing lines to hit volume, yield and on-time dispatch targets
* Balance batch scheduling to minimise changeovers, allergen cross-contact and downtime
* Track OEE, yield and wastage; act on variances same day
Raw Material Management:
* Specify flours (by protein, ash, moisture, falling number) and mix ingredients (sugars, starches, leaveners, improvers, fats, inclusions)
* Work with procurement on supplier selection, approval and performance reviews
* Oversee goods receiving: CoA checks, sampling, quarantine and release
* Control FIFO/FEFO, storage conditions (temperature, humidity, pest control) and stock accuracy
* Maintain minimum stock levels and lead-time buffers for imported materials
Quality & Product Consistency:
* Own approved recipes/formulations, batch sheets and specifications for every SKU
* Ensure scaling accuracy, mixing times and particle uniformity are validated and recorded
* Coordinate in-process and finished-product testing (moisture, granulation, bake tests)
* Lead root-cause analysis and CAPA on non-conformances and customer complaints
Food Safety & Compliance:
* Maintain HACCP plan, allergen management and full batch traceability (one step up, one step down)
* Ensure compliance with Dubai Municipality food safety requirements, ISO 22000 / FSSC 22000 and UAE halal standards
* Prepare for and lead internal, client and regulatory audits
* Enforce GMP, hygiene, dust control and PPE; manage combustible dust and machinery safety risk
* Ensure labels meet UAE labelling requirements (ingredients, allergens, dates, batch codes)
Cost Control:
* Own cost per kg: materials, labour, packaging, energy and overheads

* Support pricing and costing for new SKUs and B2B contracts
